Touring the Sixpoint brewery in Red Hook, Brooklyn, NY. It’s operated out a tiny workspace not much bigger than a 2-bedroom apartment in the heart of Brooklyn’s Red Hook community. Still out of the tiny brewery come some of the most creative, and lovingly brewed beverages available in New York.
Sixpoint is close to where I live in Brooklyn and is available at many of the best bars around NYC, so I hope to visit one of my favorite local breweries during American Craft Beer Week!

Me: The results are finally in on my first homebrew, a Holiday IPA kit from @bklynbrewshop. It's sweet, spicy, and FLAT :(
theBrewFanatics: You could probably add a little more sugar to your bottles & give the yeast some more time to carbonate. How long since u bottled?
BklynBrewShop: If it's a bit sweet and flat it needs more time to finish carbonating. Move them out of the fridge for a few days and try another.
Me: @theBrewFanatics It's been about two weeks since bottling it and moving the beer into the fridge. We used honey as our sugar instead.
Me: @bklynbrewshop Is that all it takes to restart the yeast? Thank you for the good advice! I'll let you know how it works out.
theBrewFanatics: Did you refrigerate it immediately after bottling?
Me: I tried to follow the instructions of my homebrew kit as closely as possible; next step after bottling was to refrigerate.
theBrewFanatics: The yeast need to work at room temp. The fridge is too cold for them to carbonate. Let the #beer site at room temp for a week. Might even want to roll each bottle a couple times to stir the yeast back up. They should wake up and get to work. Let us know

Me: Woot! I just opened my first homebrew, and the swing-top shot open like a loaded gun! Guess those couple extra days fermenting helped out.
